About Me




Let me start off by introducing myself. My name is Shannon Lee and I am originally from Cleveland, OH. I currently reside in SLC, Utah. Some of you may have visited my site back when I was obsessed with planning. Well, times have changed and I've decided to focus this blog on my favorite food recipes (mostly so I can share them with my awesome friends) and transitioning to a lower waste lifestyle.


I am 24 years old and I graduated college back in May 2017. I work full time and workout at the gym a lot. I've always loved cooking, and started in the kitchen when I was a little girl. I worked in the dining hall at my university for 2 years, and then after graduation I became a health inspector. I use to work for a county department inspecting retail food and restaurants (food services), and many other types of inspections. Now I'm focusing on the food program working in retail, manufacturing, and dairy programs. The recipes you will see on this blog are geared towards vegetarian/vegan diets. I've been a vegetarian since May 2017 and I'm also lactose intolerant (hence why I try to make vegan food as much as possible). I started to make the switch to fully vegan as of January 2019- but occasionally I still eat eggs and cheese. It's much harder for me to be vegan when living with someone who is not, but I make exceptions for special occasions or social outings when it would be inconvenient for the group as a whole to find something to fit a fully vegan diet.

I moved with my boyfriend (and kitty) in March 2020 in the middle of the COVID-19 pandemic. We moved from Dayton, OH to SLC, UT. It was a long 3-day drive, but we made it and we are doing well in our new home. This pandemic has given me the time to pick up on my old hobbies and create better content.

I'm also a "newbie" runner- not so new anymore, but still learning. Many of you have followed my Instagram (formerly known as SimplyShannonLee- Now @Shannon.Runs.It) where I've shown you a glimpse of my running journey-this account quickly turned into a full blown running page. I have since re-created a dedicated food and low waste instagram page (@SimplyShannonLee , snagged the username again). I have made the decision to separate my running and lifestyle accounts because I just felt that they weren't working together anymore. 

I'm excited to re-launch this blog and add content that inspires me (and hopefully you too).
